Creamy Roasted Vegetable Lasagne



(Serves 4)

Green Day

Ingredients:-

1 red onion
1 aubergine
1 courgette
1 red pepper
Fry light
Salt and freshly ground black pepper
3 garlic cloves
350g bag Quorn mince
2 tsp dried mixed herbs
200g very low fat natural yogurt and 250g of quark
A large pinch of grated nutmeg
400g can of chopped tomatoes and 198g passata
10 sheets of no pre-cook lasagne
113g cheddar cheese

Method:-

Preheat oven to 220degC/245degF/Gas 7. Roughly chop onion, aubergine, courgette and pepper. Place on baking sheet sprayed with fry light and season well. Roast in oven for 15-20mins or until cooked.
Meanwhile, crush the garlic and fry in fry light with Quorn until Quorn is cooked. Sprinkle over the herbs and then add the roasted vegetables and stir to mix in all the ingredients.
To make the sauce, whisk the yogurt, quark, nutmeg, chopped tomatoes and passata in a bowl until well combined. Season well.
Spoon half the vegetable mixture into a casserole dish, lay half the lasagne over and top with half the sauce. Repeat the layers, finishing with the sauce. Grate the cheese, sprinkle over the top and bake in the oven for 40-45mins. Serve with salad.
