Fruity pasta salad with oranges and grapes



A tangy, sweet-savoury fruit salad, which goes perfectly with pasta shapes for a really refreshing and filling lunch that's full of vitamin C.

Serves 4

Ingredients:-
250g/9oz dried pasta shapes
3 tbsp red wine vinegar
1 tsp English mustard powder
1 tsp artificial sweetener
salt and freshly ground black pepper
150g/5oz red seedless grapes
150g/5oz green seedless grapes
2 oranges
a large bunch of chives, finely snipped

Method:-

Cook the pasta according to the packet instructions, drain, transfer to a salad bowl and set aside.

Mix together the red wine vinegar with the mustard and sweetener in a small bowl. Season and mix well. Pour this mixture over the pasta and toss well to coat evenly.

Halve the grapes and add to the pasta mixture. Cut the orange into segments and add to the pasta salad. Sprinkle over the chopped chives, toss to combine and serve.
