Iceberg lettuce and pea soup


Iceberg lettuce and pea soup

Fry light

1 onion, 

chopped

1 iceberg lettuce, shredded

800g frozen peas

900ml stock (I used vegetable)

salt and pepper to taste

Makes approx. 4 big bowls of soup.

heat the fry-light!. Fry onions until soft. Add lettuce, peas, 

stock, salt and pepper. Bring to boil. Simmer for 20

 minutes. 

Blend to desired consistency.

  1. Absolutely lush. A real favourite in our house. I've also made it using up left over spring onions, a little gem lettuce and a couple of handfuls of frozen peas. Enough for two and very very green in every sense of the word!

  2. Great soup, added some garlic, mint sauce, milk and black and red pepper to give it a bite. Will definitely make again, whole family loved it.
