day 36/40 Lunch Idea's - Luxury Seafood Roll



Ingredients
2oz/57g red or pink salmon, canned in brine, drained
 1oz/28g crab or seafood flavour sticks 
1oz/28g peeled prawns, thawed if frozen 
1 level tsp reduced calorie mayonnaise 
1 tsp very low fat natural fromage frais
 1 tsp freshly chopped dill 
2oz/57g wholemeal roll 
½oz/14g mixed baby salad leaves 
Salt and freshly ground black pepper
1. Flake the salmon and crab sticks and place in a bowl with the prawns. 2. Combine the mayonnaise, fromage frais and dill and toss into the fish. 3. Split the roll in half, arrange the salad leaves over the bottom half, top with the seafood mixture and season well. Sandwich together with the top half of the roll, wrap and chill until required. Pack some lemon wedges to squeeze over the fish for extra flavour.
