A sophisticated starter that's
made in minutes; one taste is enough to transport you into the tuscan hills!

Ingredients:-
4 Ripe peached
150g/5oz very low fat fromage
frais
50g/2oz quark soft cheese
1 tsp very finely grated lemon
zest
2tsp lemon juice
4 tbsp very finely chopped mixed
herbs
salt and freshly ground pepper
To garnish - freshly grated lemon
zest
Method:-
Using a sharp knife, cut the peaches in
half lengthways and carefully remove the stones.
Place the peaches on a serving platter
or plate, cut side up.
In a small bowl, whisk the fromage
frais and quark until smooth and then stir in the lemon zest and juice and
chopped herbs, reserving some for garnishing, and mix well to combine. Season
to taste.
Spoon this herby mixture into the centre of the peaches. Garnish with
the reserved chopped herbs and grated lemon zest and serve immediately.
