Asparagus and Lentil Quiche




Syn free

Ingredients:-

8 oz Red Lentils
1 tbsp Chopped fresh Basil
3 Egg Whites and 2 whole Eggs
4oz Tinned Asparagus Spears
1 Red and 1 Orange Pepper, de seeded and cut into strips
4 Spring Onions, sliced
8 Black olives, Stoned (1 syn)
2 Healthy Extra a Portion of grated cheese.
8 tbsp 0% Fat Fromage Frais

Method:-

Preheat the oven to Gas Mark 5.

Cook the lentils according the pack instructions, leave to cool.

When cooled, stir in pepper to taste and the basil. Add the 2 egg whites and mix well.

Press into an 8 inch loose based flan tin sprayed with a little fry light and back for 30 minutes, until the base feels dry.

Arrange the peppers, asparagus, onions, olives and cheese on the base

Beat the 2 whole eggs with the fromage frais and spoon it over the mix.

Bake for 35-40 minutes until set.
