there are so many variations of
filling i wont bore you with all of them but filling of choice for us is:
onion one medium chopped small
one red pepper also chopped small
mushrooms sliced or chopped
bacon fat removed too if you need a
bit of meat (we all do now and then haha!)
three cloves of garlic/ sometimes i
do chilli
pepper to taste/ mixed herbs
6 eggs
200g of cottage cheese (i did one
with half a tub of cottage cheese and four eggs which was kinda enough for one
meal with me/hairy and small)
chop and soften filling in a frying
pan using fry light (if you use bacon you can usually do without it)
in a bowl whisk up the eggs/cheese
and spices/herbs
add together
pour into a dish (i use a silicone
round or square)
puit in the oven for about half an
hour .. watch it because like all egg things they seem to vary cooking
times
with six eggs i usually get enough
for three (oldies have other things)
and lunch the next day as it is
stonking cold!
