Cabbage and carrot stir fry



Cooking vegetables lightly preserves their nutrients so this stir fry is very healthy as well as quick and tasty. It would go well with noodles on a green day or grilled meat on an original day.

Serves 4

Cooking time 10 mins

Ingredients:-
3 carrots, peeled
2 garlic cloves, peeled and thinly sliced
1 red onion, peeled and thinly sliced
200g/7oz sweetheart cabbage, finely shredded fry light for spraying
1 tsp ground ginger
2 tsp ground cajun spice
juice of 1 lemon
salt and freshly ground black pepper

Method:-

Using a mandolin or vegetable shredder, thinly slice the carrots to get thin julienne strips. Prepare the rest of the vegetables.

Spray a large non stick wok with fry light and place over a high heat. Add the garlic and onion and stir fry for 2-3 minutes.

Add the carrots, cabbage, ginger, cajun spice and stir fry for 5-6 minutes. Add the lemon juice, remove from the heat, season well and serve immediately.
