Cooking vegetables
lightly preserves their nutrients so this stir fry is very healthy as well as
quick and tasty. It would go well with noodles on a green day or grilled meat
on an original day.

Ingredients:-
3 carrots, peeled
2 garlic cloves,
peeled and thinly sliced
1 red onion, peeled
and thinly sliced
200g/7oz sweetheart
cabbage, finely shredded fry light for spraying
1 tsp ground ginger
2 tsp ground cajun
spice
juice of 1 lemon
salt and freshly
ground black pepper
Method:-
Using a mandolin or vegetable shredder, thinly slice the carrots to get
thin julienne strips. Prepare the rest of the vegetables.
Spray a large non stick wok with fry light and place over a high heat.
Add the garlic and onion and stir fry for 2-3 minutes.
Add the carrots, cabbage, ginger, cajun spice and stir fry for 5-6
minutes. Add the lemon juice, remove from the heat, season well and serve
immediately.
