Frittata



Syn free

Ingredients:-

4 Large Eggs
1 or 2 Large Onions
Fresh Tomatoes
1 Pepper (colour of your choice)
Salt and Pepper
Grated Cheese (as Healthy Extra A)

Method:-

Finely slice the onions, pepper and tomatoes. Fry gently in fry light until soft and the onions translucent. Remove from the pan and drain excess juices.

In a bowl beat the eggs and add seasoning. Add the cheese and fried veg to the mixture (or any other veg you want).

Spray fry light into a pand and fry mixture gently like an omelette finishing off under a hot grill until set.
