Herby Rice Cake




Serves 4

Sins per serving

Green syn free
Original 21½

Ingredients:-

2 Leeks
4x 120g packs Batchelors
Mushroom Savoury Rice
4 eggs
4 tbsp. freshly chopped
Flat-leaf parsley.
Fry light.

Method:-

Finely chop the leeks and place in a pan with the savoury rice. Pour over 3pts boiling water, cover and simmer for 20-30 minutes until the rice is cooked and has absorbed all the liquid. Transfer to a bowl and leave to cool. Beat the eggs and stir into the rice with the herbs. Heat a large frying pan sprayed with fry light. Spoon the rice into the pan and pat down. Fry for 5 minutes then place under a grill for 3-4 minutes until golden. Cut into wedges and serve with a large mixed salad.
