Egg Fried Rice



Syn free if on EE Serves 2
100g rice
low fat cooking spray
6 spring onions
1 red pepper, deseeded and diced
1 garlic clove crushed
60g canned sweetcorn
75g peas
8 crab sticks, cut into chunks
1 egg beaten
soy sauce to taste
cook rice for 15 mins or according to packet instructions
after about 10 mins heat wok and spray with low fat spray. Stir fry spring onions, red pepper and garlic for about 2 mins.
Add sweetcorn, peas, crab sticks and cooked rice. Stir fry for another minute
Make space in bottom of wok amongst vegetables and pour in some of the egg. Stir in so that it sets in little peices, then repeat process pouring an stirring with the rest of egg
Mix everything together and serve immediately with a little soy sauce.
