if not using feta cheese as a healthy extra!!!
3 coarsely grated courgettes
200g crumbled feta cheese
2 tsp cumin seeds
small handfull of fresh dill, finely
chopped (dried would do)
1 red chilli, deseeded and finely
chopped
2 lightly beaten medium eggs
2 level tbsp self raising flour
salt and pepper
fry light
1. Put courgettes in fine sieve,
using back of spoon, sqeeze liquid out, add to a bowl with feta, cumin, dill,
chilli, eggs and flour, season and mix well.
2. Spray a large frying pan with fry
light and put over a medium heat, divide mixture into 8 portions, once pan is
hot cook fritters for 2-3 mins on each side until golden, serve with tzatziki
